Today, I’m sharing a recipe that brings together the rich flavors of fall with a touch of Italian flair. This Honey Garlic Chicken with Roasted Fall Vegetables is the perfect dish to enjoy with your family on a crisp autumn evening.
Autumn Comfort: Honey Garlic Chicken and Roasted Vegetables
Equipment
- 1 non sticky skillet
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 4 cloves of garlic, minced
- 1/4 cup honey
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp fresh rosemary, finely chopped
- Salt and pepper to taste
For the Roasted Vegetables:
- 2 cups butternut squash, peeled and cubed
- 1 cup Brussels sprouts, halved
- 2 large carrots, sliced
- 1 red onion, sliced
- 3 tbsp olive oil
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Prepare the Marinade:In a small bowl, whisk together the minced garlic, honey, olive oil, balsamic vinegar, rosemary, salt, and pepper. Place the chicken breasts in a large resealable bag or shallow dish, and pour the marinade over them. Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Roast the Vegetables:Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the butternut squash, Brussels sprouts, carrots, and red onion with olive oil, thyme, salt, and pepper. Spread the vegetables out on a large baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Cook the Chicken:While the vegetables are roasting, heat a large skillet over medium heat. Remove the chicken from the marinade (discard the remaining marinade) and cook the chicken in the skillet for 6-7 minutes on each side, or until golden brown and cooked through.
- Serve and Enjoy:Serve the honey garlic chicken alongside the roasted fall vegetables. Drizzle any pan juices from the chicken over the top for an extra burst of flavor. Buon appetito!
